The increase your changes, you have to stay polite, be with a girl or alone, dress properly for the club but in many cases, that means casually or hip , come early and not be a tourist. During the weekend you'll find lots of people from Amsterdam and people from outside of Amsterdam. During the week you'll find mostly students and tourists. Thursday evening is a real students night. Many people from Amsterdam prefer sunday and friday because it draws a different crowd. Around Leidseplein you find most tourist bars, like bulldog cafe, the news etc.
There's also the alto jazzcafe. Paradiso and Melkweg has lots of concerts and clubnights, and do not have a strict doorpolicy. Sugarfactory is a hipper club.
